It is simply a letter — and letters carry an implication that a specification never could. Buyers see A, assume best, and pay accordingly. Then they extract the beans, throw the pods away, and never learn that the grade they discarded would have delivered more flavour for less money. Here is the arithmetic that most vanilla buyers have never run, and the one-line specification habit that fixes it permanently.

What About Grade C — and Cuts?


Below Grade B sits a tier that gourmet-focused buyers rarely think about but extract houses know well: Grade C, sometimes called cuts, splits, or TBEX (extraction-grade) material. These are shorter fragments, off-cuts from grading whole pods, or beans with cosmetic defects too severe even for a Grade B listing. Grading conventions vary by origin, too

The letter-grade confusion compounds further once origin enters the picture. Madagascar's trade has historically leaned on Gourmet/Extract naming alongside A/B/C. Indonesian exporters, including growers across Bali and East Java, often use a mix of A/B/C and house-specific length-and-moisture bands that don't map one-to-one onto Madagascar conventions. A "Grade A" sourced from one Indonesian cooperative and a "Grade A" from a Madagascar exporter can both be legitimate, correctly graded product under their own house standard, and still not be interchangeable specifications.
